Preheat oven to 400°F (200°C). Pat drumsticks bone-dry with paper towels (this is the secret to a good bake). Season generously with salt, pepper, and olive oil.
Arrange chicken on a lined baking tray. Roast for 35 minutes, flipping them over halfway through to ensure even browning.
While chicken is in the oven, combine garlic, honey, soy sauce, vinegar, mustard, and pepper flakes in a small saucepan. Simmer for 2–3 minutes until it coats the back of a spoon.
Remove tray from oven. Brush each drumstick generously with the sauce. Return to the oven until the skin is sticky and the sauce has caramelized into a dark, glossy glaze.
Let rest for 5 minutes. Sprinkle with fresh parsley. Pairs perfectly with steamed jasmine rice or roasted root vegetables.
