🥗 Ingredients

  • 2 Ripe mangoes (diced)
  • 1 Red bell pepper (sliced)
  • 1 small Red onion (sliced)
  • ½ English cucumber (sliced)
  • 2 tbsp Fresh cilantro
  • 2 Fresh limes (juiced)
  • 2 tbsp Olive oil
  • 1 tsp Honey or agave
  • Salt & pepper to taste
  • Chili flakes (optional)

🔪 Directions

  1. Assemble: Toss the diced mango, bell pepper, red onion, and cucumber into a large chilled mixing bowl.
  2. Whisk Dressing: In a separate small bowl, combine lime juice, olive oil, and honey. Whisk vigorously until the dressing is emulsified. Season with salt and pepper.
  3. Coat: Pour the dressing over the fruit and veg. Toss gently—you want to coat the mango without turning it into mush.
  4. Garnish: Finish with fresh cilantro and a pinch of chili flakes if you want a sweet-and-spicy “Mexican street fruit” vibe.
  5. Chill: Let it sit in the fridge for 10 minutes. This allows the lime to soften the bite of the raw onion.
