
Juicy Mango & Citrus Salad

🥗 Ingredients
- 2 Ripe mangoes (diced)
- 1 Red bell pepper (sliced)
- 1 small Red onion (sliced)
- ½ English cucumber (sliced)
- 2 tbsp Fresh cilantro
- 2 Fresh limes (juiced)
- 2 tbsp Olive oil
- 1 tsp Honey or agave
- Salt & pepper to taste
- Chili flakes (optional)
🔪 Directions
- Assemble: Toss the diced mango, bell pepper, red onion, and cucumber into a large chilled mixing bowl.
- Whisk Dressing: In a separate small bowl, combine lime juice, olive oil, and honey. Whisk vigorously until the dressing is emulsified. Season with salt and pepper.
- Coat: Pour the dressing over the fruit and veg. Toss gently—you want to coat the mango without turning it into mush.
- Garnish: Finish with fresh cilantro and a pinch of chili flakes if you want a sweet-and-spicy “Mexican street fruit” vibe.
- Chill: Let it sit in the fridge for 10 minutes. This allows the lime to soften the bite of the raw onion.
